Pudina Aloo Sabji (Potato Mint Curry)


Boiled potatoes are flavored with lots of pudina (mint) leaves and lemon juice. Serve with Kuttu ki Poori and Makhaney ki Kheer.

Ingredients:

  • 2 large potatoes boiled, peeled and chopped roughly
  • 2 tbsp cooking oil
  • ½ tsp cumin seeds
  • 1 tsp ginger paste
  • 1 tsp green chili paste
  • Rock Salt to taste
  • ½ tsp black pepper powder
  • 1 tbsp lemon juice
  • 1/2 cup chopped pudina (mint) leaves

Method:

  • Heat the vegetable oil in a pan and add the cumin seeds to it. When the seeds stop spluttering, add ginger, green chili paste and fry for a minute.
  • Add chopped potatoes, black pepper, rock salt and chopped pudina (mint) leaves.
  • Stir fry for 2-3 minutes so that potatoes are mixed properly with the spices.
  • Add 2 tbsp of water and continue stir frying till all water is absorbed by potatoes.
  • Mix in lemon juice. Take out in a dish. Garnish with chopped cilantro.
  • Serve hot with Kuttu Ki Poori , Kadhai Paneer , Ghiya Ka Raita and Makhanay ki Kheer.
